A head baker is need at Melcom Ghana. This vacancy is located in Accra and Kumasi Malls.
Job Overview:
Production Oversight
- Supervise the daily production of all bakery items, including bread, pastries, and specialty baked goods, ensuring consistency in quality and adherence to recipes.
Recipe Development & Standardization
- Create and refine recipes for various baked goods, standardizing them for production, and ensuring that all team members follow them precisely.
Training & Development
- Train, mentor, and manage a team of bakers, providing guidance on techniques, production methods, and safety standards, while fostering a collaborative work environment.
Equipment Management
- Oversee the maintenance, operation, and cleanliness of all baking equipment, ensuring it is in optimal working condition and coordinating repairs when necessary.
Inventory & Cost Management
- Manage inventory levels, order supplies, and control costs by optimizing ingredient usage and minimizing waste, while maintaining the quality and freshness of products.
Prerequisites:
- Minimum of 3-5 years of professional baking experience, with a strong background in producing a wide range of baked goods, including bread, pastries, and cakes.
- Proven experience in a leadership role within a bakery or similar setting, with the ability to manage and motivate a team effectively.
- Expertise in advanced baking techniques, including sourdough starters, fermentation, lamination, and other specialized processes.
- Strong time management skills, with the ability to prioritize tasks, manage production schedules, and meet deadlines in a fast-paced environment.
- Understanding of inventory management, cost control, and budgeting, with the ability to make decisions that positively impact the profitability of the bakery.
